Onion Rings
6 jumbo onions
1 quart buttermilk
3 cups flour
1 quart milk
8 eggs
3 cups medium cracker meal
Peel and slice onions into 1/2 inch thickness. Pop out centers and rings.
Soak onion rings in buttermilk. Remove and shake off any extra buttermilk.
Dredge in flour and coat well. Combine milk and eggs with a whip. Mix
well to make egg wash. Dip onion rings in egg wash and roll in cracker
meal. Coat well. fry at 325° in deep fryer until golden brown.
