Balsam, Reds
White Pine Potato Salad
16 to 20 Baby Red
Potatoes cooked a& sliced.
1 med large onion (Vidalia is good!)
1 lb thick sliced bacon- cut in pieces
3 T flour
Combine:
½ c white vinegar
1 ½ c balsamic vinegar
1 ½ c water
6 T sugar
Cook bacon and reserve
drippings. Brown chopped onion in drippings
Add flour and stir as it thickens over the heat. Pour in the combined
mixture.
Pour over potatoes. salt and pepper to taste. Serve warm or cold.
Prep time 30 minutes . Serves eight.
