Goode's Barbecue Mop
Provides a basting sauce with a deep smoky flavor.
4 cups beef broth
2 bay leaves
1 teaspoon oregano
2 tablespoons butter
1/4 cup onions, chopped
1/4 cup celery, chopped
1/4 cup green bell peppers
1/4 cup fresh garlic cloves, minced
2 tablespoons JIM GOODE'S BARBECUE RUB
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/2 teaspoon white pepper
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
2 lemon zest, finely grated
2 fresh lemon juice, from the two lemons
2 tablespoons soy sauce
2 tablespoons white wine vinegar
1 tablespoon olive oil
1 tablespoon sesame oil
1 pound bacon, finely chopped
Bring broth bay leaves and oregano to a boil. Reduce heat to a simmer.
Melt butter in a separate skillet. Add onions, celery, green pepper,
garlic, rub, mustard, salt , white, black and cayenne pepper. Cook until
browned about 5 minutes. Add to broth.
Add lemon zest,
lemon juice, oils, vinegar and soy sauce. Stir to combine. Cook bacon
separately, chop and add bacon and renderings to broth. Simmer until
broth is reduced one fourth about 45 -60 minutes. Adjust seasoning.
