April 23rd:  This day marks the beginning of the MOOvement in the Center Court Restaurant to provide locally raised, grass-fed beef hamburgers!!  Stop in and try one this week, and you’ll be coming back for more.  The sustainable meat producer, Troy Salzer, will be available for a “Meat and Greet” in the restaurant, on Monday, April 23rd, from 11:30-12:30. See pictures below.

April 26th:  Special “local foods” dinner in the Dining Center for the housing residents, the campus community and the public.  The dinner will highlight hamburgers made from locally raised beef from Troy Salzer’s Sandy Hills Ranch in Barnum.  The dinner will also serve homemade wild rice burgers, and Juneberry-rhubarb crisp.  The juneberries were picked right on the UMD campus!! Roasted potatoes and other sustainably grown vegetables from the Fisher-Merritt Farm in Wrenshall, and Sandy Hills Ranch of Barnum, will be served as well.  Dining hours, 4:30-7pm.  Cost: $8.90 plus tax. Troy Salzer, owner of Sandy Hills Ranch, will be available for a “Meat and Greet” in the Dining Center Thursday, April 26th from 5-6pm.
