Orange Raisin Muffins

2 C. all purpose flour  
4 tsp. baking powder
½ tsp. salt
½ tsp. cinnamon
2 eggs, slightly beaten
C. vegetable oil
1 C. orange juice
1½ T. orange peel, grated
1 C. packed brown sugar
3 C. Rice Chex, crushed to 1 cup
¾ C. golden raisins

Preheat oven to 400º. Grease 18 muffin cups. Sift together flour, baking powder, salt and cinnamon. Combine eggs, oil, juice, peel and brown sugar. Stir in crushed Chex and raisins. Add all at once to dry ingredients and stir until just moistened. Spoon into muffin cups. Bake 15-20 minutes or until tester inserted in center comes out clean. Makes 18 muffins.
