Chicken Naranja                                                    Yield: 4

4 chicken breasts
1 cup fresh orange juice
½ cup soy sauce
1/3 cup packed brown sugar
10 slices fresh gingerroot
1 cup celery seed
2 T cornstarch in ½ cup water

Arrange chicken skin up in large shallow pan. Mix orange juice, soy sauce and brown sugar. Pour over chicken. Sprinkle ginger and celery around chicken. Bake in 350 degree oven for 50 minutes. Remove chicken; stir in cornstarch mixture. Put chicken back in pan, skin side down. Bake about 10 minutes longer until sauce thickens. Serve with rice.
