Fruited Stuffed Wild Goose

1 4-6 lb. wild goose
½ C. butter or margarine
½ C. onion, chopped
1½ C. apple, peeled and diced
3½ C. soft bread crumbs
½ C. raisins
¾ tsp. salt

1/8 tsp. pepper
¼ tsp. sage
bacon slices
1 C. orange juice
½ C. cooking sherry or brandy
2 T. butter

Salt and pepper the cleaned goose inside and out. Melt butter or margarine. Saute onions and apple until tender. Add bread crumbs, raisins, salt, pepper and sage. Stuff goose. Cover breasts and legs with bacon slices. Roast uncovered 2-2½ hours at 350º.

Combine orange juice, sherry or brandy and 2 T. butter.
Baste goose every 15 minutes with this mixture.

4 servings.
