Honey Duck

Mix together:

1 tsp. Ginger
1 tsp. Salt
1 tsp. Basil leaves
. . . Sprinkle leaves inside and outside of each duck and stuff with one-half an orange and layer in roaster. Add two cups water

Mix together in saucepan: 1 cup honey, ½ cup butter, 1 tsp. Lemon juice, ½ cup orange juice concentrate (undiluted). Simmer together until syrupy. Pour a little over each duck in roaster - save the rest for basting. Cover roaster. Start ducks at 350 degrees for one-half hour. Turn ducks breast side down, reduce heat to 300 degrees and roast, covered, for about two to two and one-half hours more or until very tender. You may want to turn ducks up during the last few minutes, to brown.
