Cheese Straws
Great as a brunch
item, an appetizer and with salads.
2 pounds sharp Cheddar cheese, shredded 6 cups
3 teaspoons baking powder
3 cups flour
3 teaspoons salt
8 tablespoons margarine
cayenne
Parmesan cheese, Optional
fines herbes, Optional
This recipe is based on 6 cups of shredded cheese. Use 1
teaspoon of baking powder and 1 cup of flour for every 2 cups of shredded
cheese you shred to assure accuracy. Grate the cheese finely. Mix the
above ingredients. Add water to moisten if dough is to sticky to handle.
Make balls the size of baseballs, then roll them out very thinly. Cut
in strips and place on cookie sheet. Bake at 375° until brown about
15 minutes.
Sprinkle lightly
with Parmesan cheese if desired.
