1 cup wild rice
3 cups beef consomme
1 dash salt
1 dash pepper
1 cup shelled walnuts, coarsely broken by hand
1 each apple
1 tablespoon butter
1 tablespoon minced fresh parsley
Rinse wild rice in cold water. Drain. Pour boiling water over rice to
cover. When cool, repeat. repeat twice and finally drain very thoroughly.
Bring consomme to boil, add rice and simmer, covered without stirring
until rice is tender and moisture is absorbed, In about 30 minutes.
Season to taste with salt and pepper. Add all remaining ingredients
and mix lightly. Put into casserole and keep warm until ready to serve.
