Hickory Smoked Grilled Salmon

FISH MARINADE
2 teaspoons liquid wood smoke flavoring
salmon, large whole filet
Spice Island Old Hickory Smoked Salt

Combine marinade and liquid smoke and marinate salmon. Sprinkle lightly with hickory salt. Refrigerate and marinate for 1 hour.

Place fish in aluminum pan or on double thick foil and place on grill over indirect coals. Do not cover fish with foil. Cover kettle and cook approximately 12 minutes until fish is flaky. Baste with marinade 2 or 3 times during cooking.
