Steaks With Roquefort
2 pounds ground beef
1/2 cup crumbled Roquefort cheese
1 medium onion
3 tablespoons salad oil
2 cloves garlic, minced
2 eggs, beaten
1 tablespoon parsley, chopped
2 tablespoons soft butter
2 tablespoons brandy
1 teaspoon salt
1/4 teaspoon pepper
In a large skillet, saute onion in 2 tablespoons oil until transparent
about 3 minutes. Add garlic and cook until garlic begins to be transparent.
about 1 minute. Add to beef in a large bowl. Add parsley, eggs, salt
and pepper to beef and mix well. Shape into 4 giant oval hamburger balls.
For the filling in a small bowl, mix together the Roquefort cheese,
brandy and butter until creamy. Make a hole in one side of each beef
ball and fill with one fourth of the cheese mixture. Mold the meat over
the opening, Brush with the remaining tablespoon of oil, season to taste.
Broil turning once.
