Prime Rib

Great with hard rolls for dipping into au Jus.

7 to 8 pounds prime rib roast
salt
pepper
water, as needed
AU JUS

Preheat oven to 500°. Place roast in pan rib side down fat side up. Sprinkle with pepper. Sprinkle with salt only near end of roasting. Roast for 15 minutes. Reduce heat to 325° and continue roasting. Roast until it reaches 130° for medium-rare roast as it will continue cooking after removed from the oven. About 2 - 2 1/2 hours. Transfer to platter and cover loosely with aluminum foil. Let rest 15-20 minutes before carving. Pour fat off pan and heat juices over medium heat. Deglaze pan. Make Au Jus and serve on the side.
