Basic Slow Roasted Duck


flour
bread stuffing crumbs
onion, chopped
sage
celery, chopped
thyme, Optional
duck

Make a bread dressing, using onions, celery if desired and seasonings desired. Sage should be the sole or dominant seasoning. Stuff ducks. Put a little oil in the roaster and brown breast side first, then turn on backs, cover tightly. It should make its own steam, but watch to make sure there is juice throughout the cooking. Simmer for at least 6 hours in oven or on top of stove.
