Garlicky Country -Style Pork Roast

1 5 to 8 pound boneless pork loin roast
1/2 to 1 tablespoon garlic chips
2 teaspoons coarse black pepper
2 teaspoons dried leaf rosemary
1 teaspoon coarse kosher-style salt
2 tablespoons olive oil

Place roast in roasting pan Combine garlic, pepper, rosemary and salt in a bowl. Add just enough olive oil to allow mixture to be rubbed on roast. Rub evenly all over roast. Place in preheated oven at 350°. Roast to 160°. [approximately 1 to 2 hours for for a large roast] Let stand 20 minutes before carving.
