Potatoes Au Gratin

6 cups potatoes, cooked, cubed
1/2 cup butter
1/4 cup green onions, sliced
1/2 cup green bell peppers, chopped
salt
pepper
1 teaspoon paprika
1 teaspoon parsley flakes
6 tablespoons all-purpose flour
1 quart milk
2 cups sharp Cheddar cheese

Preheat oven to 350°. Grease a shallow 3 quart baking dish. In a large pan heat butter and saute green onions and bell pepper for 1 minute. Add salt, pepper, parsley, and flour and stir until blended. Stir in milk and cook until thickened. Add cooked potatoes and 1 cup of cheese. Stir until cheese is melted. Pour mixture into baking dish. Sprinkle with remaining cheese. Bake 30 to 45 minutes or until bubbly. Top with buttered crumbs before baking if desired.
