Caramelized potatoes

12 medium potatoes
1 1/2 cups beef consomme
1/4 cup brown sugar

Place the potatoes in boiling, salted water to cover and cook until fork tender. Remove the skins. Combine the consomme and brown sugar in a medium saucepan. Cook and stir over low heat until the sugar is dissolved.

Add several potatoes at a time to the consomme mixture, turning until the potatoes are coated. Remove to a warm serving platter and repeat the process until all the potatoes are coated. The platter may be kept warm in the oven at a very low temperature.
