Grilled Potatoes Boulangere

Can use either chicken or beef stock or bouillon. Watch the salt if you use canned, cubed or granule based bouillon or stock that isn't homemade.

8 potatoes, pared
2 onions, thinly sliced 1/4' thick
1 tablespoon fresh parsley, chopped
1 1/2 teaspoons salt
fresh ground black pepper
1/4 cup margarine
1 cup beef stock, hot

Mix potatoes and onions. Season. Spread 1/2 deep in buttered aluminum foil pan. Dot with margarine or butter. Add hot stock. Place on grill on indirect heat, cover and bake 30 to 40 minutes until potatoes are tender, brown and crusty and the liquid has disappeared.
