Stove-Top Potatoes Hashed in Cream

This basic James Beard recipe is a delicious and rich tasting way to cook potatoes.

4 to 6 potatoes, boiled
paprika
butter
heavy cream
flour
salt
pepper

Boil potatoes and cut them into cubes. Saute them in butter until they are heated through and golden. Sprinkle with a very small amount of flour, salt and pepper. Slowly pour in the heavy cream to cover the bottom of the pan. Let the potatoes cook gently in the cream, watching to see that they don't scorch. Add lots of paprika.
