Those Potatoes

This was one of Mary Dean's standbys when cooking for company.

4 baked potatoes
1 onion, chopped
heavy cream

Bake the potatoes a day ahead and chill in refrigerator overnight. Butter baking dish and dot with margarine. Peel and chop potatoes in a chopping bowl to about 1/4 inch dice. Chop onion. Season potatoes and onion with salt and pepper. Add heavy cream to bind so that you can pull a spoon through readily not syrupy but very moist. Place in buttered baking dish. Dot top with butter or margarine. Bake about 1 1/2 hours at 350 to 375°

This dish can be made in the morning and just sit in the
refrigerator until ready to bake.
