Twice- Baked Potatoes

BAKED POTATOES
2 tablespoons butter
milk, heated

Cut baked potatoes lengthwise slice from the top of each potato. Scoop out the pulp. Mash with butter, milk and any seasoning desired. May be topped with cheese, Pesto, Aioli, herb butter or garlic puree. Half and half or cream will provide a sinfully richer potato.
