Bechamel Sauce
"Basic White Sauce"

2 tablespoons butter
2 tablespoons flour
1 cup milk
salt
pepper

Use double boiler. Using top pan blend the butter and flour over low heat. Place over hot water. very slowly add the milk, continually stirring. Return to heat and cook slowly, stirring all the time until the sauce thickens and is very smooth. Season with salt and pepper. If you want thicker sauce use 3 or 4 tablespoons of flour.
