Bordelaise Sauce

This is a variation of basic brown sauce. Its great with steak, lamb and rump roast.

6 shallots, chopped finely
4 tablespoons butter
1 cup red wine
2 tablespoons lemon juice
2 tablespoons fresh parsley
salt
cayenne pepper
BROWN SAUCE

Cook shallots on butter. Add wine and simmer. Add brown sauce and remaining ingredients to taste.
