Wild Rice Duck Soup

A secret of this great soup is the use of a pressure cooker for the duck.

2     mallards
1     pound spicy Italian sausage
1/2  pound cooked wild rice
2     10 3/4 ounce can cheese soup
1     10 3/4 ounce can chicken broth
       sliced carrot
       diced potato
       thin sliced celery
       cauliflower, optional

Pressure cook ducks [ 3 if smaller Ducks] until meat separates from the bone easily [about 15 minutes]. Remove all meat . Remove skin. Chop or dice meat. Brown uncased sausage lightly. Combine all ingredients into crock-pot or stock-pot; season to taste and simmer for at least 3 hours.
