Grandma Cayia's Horseradish and Beet Relish

This relish is excellent with meats especially Beef and as a
zesty condiment or side dish.

1 cup horseradish
1 cup sugar
4 cups cooked beets
2 cups vinegar

Chop cold beets finely and blend all ingredients. Keep refrigerated. Use less horseradish and vinegar and add to taste. Lemon juice can be substituted for vinegar.
