Yam and Apple Gratin

4 yams
2 tablespoons unsalted butter
2 green apples, cored and cut crosswise into 1/4 " thick
slices
salt
freshly ground pepper
1 cup heavy cream
1/4 cup sweet vermouth
1/4 cup orange juice
1/2 teaspoon nutmeg
1/2 fl. ounce fine dried bread crumbs

Preheat oven to 350°. Place the yams in a large saucepan and add water to cover. Bring to a boil over high heat. Reduce the heat and simmer, uncovered until tender, 20-30 minutes. Drain and let cool. Peel and cook crosswise into slices 1/2 " thick. Melt butter in a frying pan over medium heat. Add the apple slices and saute until golden, about 3 minutes on each side. Remove from the heat. Place half the yam slices in a baking dish and season with salt and pepper, In a small bowl stir together the cream, vermouth, orange juice, and nutmeg and pour half of the mixture over the yams in the dish. Cover with the apple slices and then place the remaining yam slices on top. Pour over the remaining cream mixture. Sprinkle the bread crumbs evenly over the top.

Place in the oven and bake until brown and bubbling about 30 minutes. Serve directly from the baking dish.
