Fran's Potato Pie

20 oz cottage cheese

3-6 medium potatoes

8 oz sour cream

2-3 eggs

1/8 t cayenne pepper

2 cups grated parmesan cheese

1/2 cup grated other cheeses

1/4 cup butter

bread crumbs



FILLING: Cook and mash the potatoes, add lots of butter

Add sour cream, eggs and cottage cheese

saute onions and add these too

CRUST: grease the pan, crumble bread crumbs to cover the bottom, add a few pats of soft butter

Cover with grated cheese and press all together

Bake in 350o oven until browned

Add the filling and cover the top with cheeses

Bake 350o for an hour

(You can also make this ahead of time and put in the 'fridge and just do the baking part for an hour before you need it)
